Southern Green Beans Recipe
Fresh green beans are a must in my holiday meals and for years I've been looking for a recipe that included bacon and that sweet/sour taste I remember as a kid. As an adult, I also need that "sweet/sour" to be diabetic friendly. I finally found it! This recipe is fresh, keto and diabetic friendly and EASY to make!
Ingredients
2 lbs fresh green beans
1 package of bacon, cut up
1 onion, diced
3 cloves garlic, minced
3 c. chicken broth
1 c. white vinegar
1 c. granulated sugar OR Stevia
salt, pepper & cayenne pepper to taste
1 package of bacon, cut up
1 onion, diced
3 cloves garlic, minced
3 c. chicken broth
1 c. white vinegar
1 c. granulated sugar OR Stevia
salt, pepper & cayenne pepper to taste
Prepare your fresh green beans by snapping off the ends and breaking into 1-2" pieces. Wash in cold water and leave them in cold water until you're ready to cook.
Using a large skillet or wok, fry bacon pieces until almost crisp.
Remove bacon and cook diced onion in bacon grease until soft and brown. Add garlic and cook 1- minutes more.
Add green beans and chicken broth, raising heat. (I usually transfer everything to a dutch oven or pot at this point.) Beans will begin to soften. Once beans are slightly boiling, reduce heat to simmer, cover and cook for 1 1/2 hours, stirring occasionally.
Mix vinegar with sugar or Stevia (it really does taste the same!). Add to green beans and cook uncovered for 30 minutes more.
See all that beautiful juice? This recipe is really good with fresh cornbread. Enjoy!
